Mountainman Breakfast

Besides tasting great, easy to prepare, what else makes this dish so good is that it's a one pot meal.
Mountainman Breakfast
2 Pounds Breakfast Sausage (Jimmy Dean)
4 Medium Sized Potatoes, peeled and cut into 1/2 cubes
8 Eggs, beaten with 1/4 cup milk
1 Cup grated cheese
4 Drops, Hot Sauce to taste (optional)
In a 12 inch Lodge Dutch oven over hot coals, brown and crumble sausage. Remove cooked sausage, and drain on paper towel.
Using sausage drippings in the pan, brown potatoes, spread them evenly in the bottom of Dutch Oven. Place cooked sausage over potatoes. Pour eggs mixture over sausage layer.
Cook with 8 coals under and 16 on top for 20 minutes (or until eggs are almost set). Add cheese on top and cook another 5 minutes. Easily serves 8
**Serving Ideas; serve with biscuits, top with gravy, make breakfast burritos and top with salsa....
