best breed for Shootin and ridin

What would be a good breed of horse for this type of sport? Honestly, I think a Morgan or quarter horse, but I am worried about when horses flinch or bounce. How do you get them to be steady.

i shoot.. and i ride... but i've never had a horse that wouldn't spook like crazy from gunshot, therefore i've never had the pleasure of mounted shooting... i train my own horses and my friends' horses. any tips on desensitizing a horse to gunshot without firing off 100 rounds?

I like the feel of the Ruger Vaquero, this weekend I was at a gun show and pick up a Cimarron 45C, It also had a good feel, the Uberti 1873 Cattleman is also a good one.
